I am getting the upgrade to windows 8 from 7 soon. I have a MacBook Pro, and thus, have 7 through Bootcamp. What should I exspect after the upgrade? I have JAWS 14, and am good in that sense.

You'll install windows 8, just like you would seven. I would make a backup, and do a clean install, however, I had a lot of problems with the upgrade, the mac threw a fit. I was able to use windows for about an hour, then it froze up on me, and I had to wipe and start fresh. Hope this helps.

yeah I'll have to get a clean install done, as windows 8 pro 32 bit, appearently doesn't exsist.

I plan to VMware win8 so I can see what the OS looks like with out boot camping the OS. If I do not like it I will just delete the VMware image.

Correct. Do a clean install. I learned the hard way, resulting in losing all my documents which I created since a backup a few years ago. Fortunately, there was nothing mission critical on my boot drive. The keyboard input was not correct after the upgrade. Also, know that Windows 8 is an obnoxiously different operating system, although you'll appreciate the speed!

Jaws does weird things on the Mac using Windows. Not really upgrading but hats off to you for doing so.

Would you recommend VMWare or just using the built-in bootcamp utility for installing Windows? Does using BootCamp require sighted assistance? I bring up that issue because there isn't anyone in this house who is tech savvy enough to run me through this stuff, should I have difficulty.

Yes, to install wth Boot Camp does require working eyeballs, but if you just use them to read the screens to you you should be just fine. Just like Windows 7 install. You could play with it in Fusion first though to make sure it's really what you want to do.
